Fruits of the Forest Crème Brûlée

One packet of frozen forest fruit

600ml double cream
5 egg yolks
50g caster sugar
4 drops vanilla extract
caster sugar (for topping)

6 ramekin dishes

Whisk the egg yolks, sugar, cream and vanilla into a bowl until light and fluffy. Place a few berries into the bottom of each of the six ramekin dishes and pour the creamy mixture over the top. Place in a roasting tin and carefully add boiling water until the water comes half way up the sides of the ramekins. Place the roasting tin in an oven pre-heated to 170°C and bake for about 40 minutes. Once cooked, remove the ramekins from the roasting tin and allow to cool at room temperature.

When ready to serve, sprinkle a level teaspoon of caster sugar evenly over the surface of each ramekin. Place under a hot grill to caramelize or use a blowtorch. Wait until the sugar forms a hard crust then serve. Enjoy that delectable crack!
