A Recipe From Sweet Jasmine Cakes and Magic


2 tbsp instant coffee powder
3 oz butter
3oz caster sugar
1tbsp runny honey
7fl oz water
8oz plain flour
1 large beaten egg
3tbsp milk
1tsp bicarbonate soda
2tbs cocoa powder
Whipped cream

Pre-heat oven gas mark 4, pop the water, honey, sugar, butter and coffee powder into a bowl. Heat everything up and gently stir until sugar has disappeared. Bring to the boil, simmer for five minutes, then pour into a bowl and allow to cool. When cool sift in the flour and cocoa. Dissolve the bicarbonate of soda into the milk, then add to the mixture with the egg and beat until smooth. Spoon the mixture into cupcake cases, and bake between fifteen and twenty minutes. When the cupcakes are cool, whip up some fresh cram and spoon on top. Dust with cocoa powder.
